Nice Matters


Nancy from Atticbabies and Jeannene from Love Conquers All nominated me for this award. What could be nicer than to have someone tell you that they think you are nice! Thank you both very very much. Nancy and Jeannine are two of the sweetest girls, store and not because they gave me this award, case but because they just are. So right back at ya girls. There are so many of you that i have met through my blog, sales that i could nominate for this award but, I really cannot name only 7, and i don’t want to leave anyone out, so let me just say this, I hear from so many sweet girls on my blog, and I thank ALL of you for each and every kind thing that you have said, i have always appreciated that you have taken the time to stop by my blog and leave such nice comments. You know who you are, and so, i would like to send this award to all of you, because NICE DOES MATTER, and you have ALL proved it. Happy day!

    Hey, thanks for visiting my blog. You asked what Caprese salad is. Here goes!

    You say it, “Cah-PRAY-say”–at least, I think you do! This recipe is from one of Giada DeLaurentis’s books.

    Caprese Salad

    3 Tablespoons fresh lemon juice
    1/2 teaspoon salt
    1/4 teaspoon pepper
    3 Tablespoon Extra Virgin Olive Oil
    1 1/4 lbs. tomatoes, cut bite-size
    6 oz. fresh mozzarella (fresh, as opposed to something like PollyO, really makes this recipe!), cut bite size
    2 Tablespoons thinly sliced basil leaves (I just sprinkle on dried basil to taste if I don’t have fresh)

    Whisk the lemon juice, salt and pepper in a bowl. Gradually whisk in oil to blend. (I just put it all in a tightly lidded jar and shake it like crazy).
    Put the cheese and tomatoes in a bowl and pour the dressing on top. Add the basil leaves.

    This is so easy and a family favorite. Made with fresh-picked tomatoes, it would be heavenly!

    oh, by the way, i agree, there is NOTHING like fresh mozarella. Giada is one of my favorites. everything she cooks looks so fresh and delicious.
